165g Unsalted Butter
225g Caster Sugar
135g Ground Almonds
60g Self Raising Flour
Zest of 1 Orange
1 Vanilla Pod (or 1tsp Vanilla Essence)
20g Flaked Almonds
15g Caster Sugar
Pre-heat the oven to 180°c
Cream the butter and sugar together till soft.
Lightly whisk the eggs then gradually add to the butter mix, mixing it in well.
Add the ground almonds, flour orange zest and scrape the seeds from the vanilla pod and add these to the mix too. Thoroughly but not to gently mix in till smooth.
Spoon into a lined 8” cake tin,
Melt the remaining butter and sugar together and stir in the almonds, spread these across he op of the cake,
Bake in the oven for around 40 minutes.
